ENVISION a chef who is all heart and soul, brains and brawn. Picture a cook and baker who pleases the palate. Yes indeed, Rosemarie Lim is an icon.
One only has to look around at the bakeshops, restos, catering services, eateries and students all around the world from the US, Australia, New Zealand, Europe, Middle East, Asia and locally from Manila to Zamboanga. Most of their success can be attributed to Caro and Marie. lim has been Chef Instructor, Directress and Owner since 1980.When she first began, she dabbled along with her mom, a natural cook whose Paella Valenciana is unsurpassed.
Chef Rosemarie having topped the icing on her cake, so to speak with a formidable resume and exposure to international cuisine, has traveled to 25 countries. She is a Magna Cum Laude graduate in Nutrition and Dietetics from the University of San Carlos and is a registered Philippine Professional Regulations Commission nutritionist-dietician.
She was beribboned at the world famous Wilton School of Decorating and Confectionary Art (Chicago, USA) as "Master in Cake Decor and Gum Paste and Pulled Sugar Techniques."
Rosemarie is an expert in Italian and Mediterranean cuisine, in healthy cooking, and in the art and science of patisserie (pastry making) and chacuterie (sausage making). She learned these at the Culinary Institute of America (Hyde Park, New York).
She hadciijubg stints in dimsum, roast duck, fruit and vegetable carving at Joseph Poon's Culinary Institute of Asia in Philadelphia, the Singapore Raffles Hotel. and the Chinese Culinary Arts Center Manila.
During an afternoon cooking sampler at Caro and Marie Culinary Studio, with the San Miguel Great Food Club, we learned money-making dishes and catering faves such as baked beef and veggie pasta (simply delicious) and cookie lollipops, which make for an attractive centerpiece.
Rosemarie was awarded the "Most Outstanding Alumna" at the 50th Jubilee Sacred Heart School Hijas de Jesus.
She has empowered women and menthrough education; provided them livelihood; and boosted their morale. She considers her students as her best trophies.
